Cuisine
Native Maltese cuisine takes its inspiration from Italian, Mediterranean and Arabic influences but is seasonal by tradition and relies heavily on fish and locally-grown produce.
Pastizzi is a popular snack. Commonly a pastry containing cheese and eggs, meat and vegetables are added to larger varieties. A typical dinner may comprise a kusksu (a bean and pasta soup), fenek (a rabbit stew marinated in red wine with onions and garlic) and kannoli (normally pastry filled with cream). Timpana (baked macaroni) and kapunata (ratatouille) are also in demand. Fish dishes include grilled swordfish and lampuka (dorado that is either pan-fried or oven-baked into a pie with short-crust pastry).
Maltese bread has a spongy texture and a hard crust and must be eaten fairly fresh. It won't last for more than a day. Soft drinks popular on Malta include Kinnie (a bitter locally-made drink made from oranges), Dr Pepper and Seven-Up. Beers made at the Farsons Brewery include Hopleaf bitter and Cisk lager, while Marsovin wine has a red, white and rose variety.
